Apple Streusel (high-fiber)

Amt    Ingredient
3 cups    tart apples, skinned and sliced
1 tsp.    ground cinnamon
1 tsp.    ground nutmeg
1 tsp.    vanilla extract
1 cup    toasted pecans, chopped
1 cup    oatmeal
1 tbsp.    lemon juice
1/2 cup    light brown sugar
2 tbsp.    unsalted butter
1/4 cup    flour
2 tbsp.    dark rum (optional)
1/4 cup     olive oil (+ as needed)

Procedure:   
• Preheat oven to 350 degrees.
• Use olive oil to oil a 9x7” baking dish.
• Combine lemon juice with apples, vanilla, cinnamon, pecans, rum (optional), and nutmeg.
• Pour into prepared dish.
• Make crumb topping with the light brown sugar, flour, unsalted butter and oatmeal; mix well by hand. Top the apple mixture with the crumb topping.
• Drizzle about 1/4 cup of olive oil over the entire streusel, to ensure the topping becomes golden while baking. Bake for 20 to 25 minutes or until the topping is golden and apples are hot.
