CRACKED CONCH

Amt        Ingredient

10 lbs.        whole fresh conch
2 cups        all-purpose flour
8         eggs, beaten
To taste    salt and pepper
1 gallon     water
3         limes
4 tablespoons   salt


Procedure:

•    Clean conch by washing with lime, 4 tablespoons salt and water.
•    Pound until meat is shredded.
•    Season meat with salt and pepper.  Dip in beaten egg and dredge in flour.
•    Fry conch until golden.
