Pickled Red Onions

Yield: 20 portions

Amt Ingredient
2 lbs. red onion, sliced 
1 ea. chile jalapeño, seedless, minced 
1 cup orange juice, sour or lime juice 
1/2 cup olive oil  
1 Tbsps.. sea salt 

Procedure:
• Mix all the ingredients together in a large glass bowl.
• Toss them well and then transfer to a smaller bowl; cover and put in the refrigerator for at least two hours, to marinate the onions.
• Toss the onions several times and taste for salt, adding more if needed.
