Island Mahi Fish Sticks

Amt Ingredient
4 4-ounce mahi mahi filets, cut into 3/4” x 3/4” x 4” strips
6 cups whole-wheat flour
1 pint Egg Beaters egg substitute
1 large (11.5-ounce) bag whole-grain chips (e.g., Sun Chips), crushed
1 cup extra-virgin olive oil
1 lemon
to taste sea salt

 

Yield:  4 servings 

Procedure:
• Preheat oven to 375 degrees.  Place flour, eggs and crushed chips in three deep dishes. 
• Coat each fish strip with flour, dip in egg, then coat with chips, making sure entire surface of each strip is covered. 
• Heat the olive oil to medium heat in large saute pan. Just before adding to pan, season fish with salt. Sear fish for 15 to 30 minutes on each side. Remove from oil, drain, then place on non-stick baking pan and place in oven for 8 to 12 minutes, until crispy and golden brown.
• Serve hot with lemon wedge and, if desired, organic ketchup and/or organic tartar sauce.
