Low-Carb Lettuce Wrap

Amt Ingredient
1 6-ounce chicken breast, sliced julienne
1/2 roasted red pepper
1/4 onion, sautéed
1 oz. Thai peanut sauce
4 large lettuce leaves
    marinade (recipe follows)

Procedure:    
• Marinate julienne chicken for three hours.  
• Grill the chicken, onion, pepper and lettuce leaves in very little olive oil. Combine all ingredients except peanut sauce and lettuce leaves.
• Spoon the filling onto the lettuce leaves. Drizzle with the peanut sauce. Roll up the filled leaves.

For the Marinade:
Yield: enough for 48 chicken breasts.

Amt Ingredient
2 48-oz. cans pineapple juice
1 cup prepared Southwest seasoning blend
2 cups soy sauce
1 cup olive oil

Procedure:    
• Mix together pineapple juice, Southwest seasoning, soy sauce and olive oil.
