Amt Ingredient

2 lbs. jicama, julienne
1 lb. pineapple, diced small
8 oz. red onion, julienne
1/2 cup mayonnaise
1 cup rice vinegar
1/2 cup cilantro, coarsely chopped
1/2 cup sweet chili sauce

Procedure:

• Combine all ingredients and mix together gently.

Yield: 8 4-oz. portions
