Hill Country Style Borracho Beans

Makes a 8-10 portions



2c        Pinto Beans, dried
2c        Tomatoes, diced
1c        Onions, diced
2c        Rope Sausage, sliced
1 bunch    Cilantro, chopped
32 oz        Shiner Bock Beer
1t        Salt
1T        Cracked Black Pepper
2T        Garlic, chopped

Let pinto beans soak in cold water overnight until reconstituted. Using a cast iron pan sauté onion and sausage until the onions are translucent, add garlic and cook until golden. Deglaze with the Shiner Bock Beer and let simmer approx. 5 minutes. Add the pinto beans, diced tomato, salt and pepper. Let simmer for another 30 minutes, taste and adjust seasoning of necessary. Add the Cilantro just before eating.
