Potato Blinis

Yield: One pan

 

Amt Ingredient

500 gr. baked potato riced
100 gr. cornstarch
2 eggs
2 egg yolks
80 gr. cream
80 gr. clarified butter
4 egg whites
10 gr. egg white powder
to taste salt, pepper, nutmeg

 

Procedure:

  • Rice the potatoes while still warm. Sift the cornstarch over the potatoes. Add the eggs and the egg yolk but not the whites.
  • Add the cream and the clarified butter. Whisk up the egg whites and the powder together to soft peaks.
  • Butter a 1/2 pan and pour the batter in. Bake off at 250 degrees for 14 minutes, Cool and cut to be fried.
  • Deep fry at 375 degrees until golden brown. Season with salt, pepper and nutmeg.
