The company’s flavor-infused tilapia and steelhead trout fillets have earned an Excellence in Innovation Award.
King & Prince Seafood’s “Fish Market Fresh” line of flavor-infused fish fillets has won an Excellence in Innovation Award from Prepared Foods magazine. The award honors creativity and “outstanding product development teams.”
King & Prince received the honor for successfully combining back-of-the-house convenience with a flavor-infusion process, to ensure consistent flavor.
“This award is very special to us,” said Volker Kuntzsch, President of King & Prince Seafood. “It shows that our culinary and R&D teams are well tuned-in to the operational needs of our foodservice customers, and know how to find ways to help them create opportunities.”
The line offers two sustainable fish species, tilapia and steelhead trout, infused with five different flavors: creamy butter herb, fiery French Quarter, Korean barbeque, cracked pepper and lemon, and sweet Hawaiian teriyaki. The cooked fish maintains its moisture in a chafing dish for up to two hours.
Fish Market Fresh can also go directly from the freezer to the oven, broiler or microwave.
“Our goal was to offer our operator customers a consistently great-tasting product with very limited prep time that would help them eliminate waste, while adding some fun and variety to their menus,” explained Susan Gurkin, Director of Innovation at King & Prince Seafood.
