6-oz. portion salmon blackening seasoning (see below)
2 cups spring greens mix
½ lemon
½ oz. balsamic vinaigrette
herb butter
For the Blackening Seasoning:
(mix all together)

2 cups paprika
1 1/2 cups kosher salt
½ cup onion powder
½ cup garlic powder
½ cup cayenne pepper
½ cup white pepper
½ cup black pepper
1/4 cup dry thyme
1/4 cup dry oregano
1/4 cup dry tarragon
Procedure:
• Heat pan
• Coat one side of salmon in spice and place, spice-side down, in pan
• Sear lightly, then finish in oven until desired doneness.
• Toss greens in vinaigrette; grill lemon.
• Arrange greens on plate along with salmon and grilled lemon; top with herb butter.
