For the Mint Basil Pesto:
Amt Ingredient
2 garlic cloves, minced
1 cup fresh basil leaves
1 cup fresh mint leaves
1/2 cup toasted pine nuts
1/2 cup grated Parmesan cheese
1 pinch salt
to taste freshly ground black pepper
1/2 cup olive oil
Directions
• Blend the garlic, basil, mint, pine nuts, parmesan cheese, salt, pepper, and olive oil in a blender or food processor until smooth.
• Serve on top of or on the side of a sliced roasted rack of lamb
