1 ea. | 12-oz. Prime New York strip steak |
2 ozs. | frites |
1/4 oz. | white truffle oil |
1/2 oz. | Parmesan cheese, freshlygrated |
½ tsp. | chopped fresh parsley |
3 ozs. | cream spinach |
4 ea. | tomato confit (teardrop tomatoes, braised in olive oil with fresh thyme; cook for 20 minutes) |
Procedure:
• Season the New York strip with a herb oil, and char-broil to temperature.
• Start the frites, frying crisp, then in a large bowl add the white truffle oil, grated Parmesan and chopped parsley.
• When frites are cooked, toss to generously coat. Hold warm.
• Plate the New York strip when temperature is reached, dish the cream spinach, garnish with the tomato confit, and pile on the frites to be very generous!
